Labor Day Weekend Recipe Round-Up

Weekly Recipe Round-Up

 
 
 
SUBSTITUTIONS I WILL MAKE THIS WEEK:
Olive Oil Spray (Pure Olive Oil)
4 scallions (or green onions), minced      -      I will be using yellow onion
2 carrots, shredded
1/2 red bell pepper, minced      -      I will substitute green onion
1/2 zucchini, shredded
14 egg whites        -       I will be using mostly whole eggs from our own chickens
4 whole eggs
1/2 tsp basil
1/4 tsp oregano
Dash of sea salt and pepper
 
 
 
Make Ahead Dinner Recipes: 
Easy Broiled Parmesan Tilapia to be served with Broccoli (from freezer) and homemade applesauce

 
 
Crockpot Fajita Salad (added fresh from the garden zucchini) & homemade fajita mix

Labor Day - Open Pit Barbeque

This past summer, Logan drug his feet on all of his 4-H projects.  He is a bit of a procrastinator but at the same time, does not work well under pressure.  I'm a bit of the opposite -- I procrastinate but seem to do my best work when I don't have time on my side.

So, we told him that he must have his posters and electric project done by July 1 or else he won't be able to take them to the fair.  No more waiting till the last minute.

We decided he could do his BBQ project already this year and have that done.  I'm not sharing the title of his poster but he will be cooking a lot of meat.  The requirements indicate that he must demonstrate cutting meat into serving sizes, develop and serve a menu to 3-7 people.

Here's what's on the menu (meats made over an open fire rather than a grill).  Can you tell - - LOTS of meat!

Meals for week of August 29

Okay, I haven't really gone to get groceries in weeks (maybe a couple months).  The kids are literally begging me to go.  So Paige and I came up with some meal ideas for the week.  On Tuesday's and Thursday's, Logan has to be at soccer at 6:30 and I don't get home from work till 5:30 or 6:00, so, you will be seeing crockpot or very simple meals for those nights.

Monday - Monterey Chicken
Tuesday - Baked Tilapia, Baked Potatoes (crockpot) and salad
Wednesday - Fajitas (for me, Fajita salad) with Mexican Rice
Thursday - CrockPot Pasta Fagioli
Friday - Homemade Pizza (for me, Udi's Gluten-free crust)
