It's JAM Time

Paige is taking Food Preservation in 4-H this year.  This is actually the first time I have ever made jam.  It is really VERY simple.  The worst part is getting the jam made before the fruit rots or gets moldy.

Here's the batch she will be taking to judging:

Two Berry Freezer Jam

 2 cups crushed strawberrys
1 cup black raspberries, packed
Mix together in large dish and gently stir.

Add in 1 box pectin and stir for 2 minutes.

Let sit for 30 minutes, stirring occassionally.

Add in 1/3 cup light corn syrup and stir.
Stir in 3 1/2 cups sugar and stir till all is dissolved.

Ladle into 6-1/2 pint freezer containers.  Cover with lid.
Let sit until set; no more than 24 hours.
Label and Freeze.

In addition to Two Berry Jam, we have also made Strawberry-Peach Jam.
